The Dining Room Manager will assist the DuPont Country Club members and guest efficiently, courteously, and professionally while overseeing the dining operations of the club to deliver exceptional service and a positive experience in line with our quality standards and Club Mission.
Key Responsibilities of the Dining Room Supervisor include the following:
Direct support of the Food and Beverage Manager in operating a high quality/diverse food and beverage operation
Oversee all appropriate ongoing training to ensure consistency and growth of the business, assure a high standard of staff appearance and cleanliness of the dining room and bar areas.
Develop, market, implement, and oversee programs and dining events to increase revenue and member appreciation while monitoring and operating the business within budgetary targets
Additional responsibilities include:
Reinforce DuPont Core values daily while achieving the Club Mission
Supervise all aspects of the dining rooms and bar
Schedule for dining shifts and controls labor according to business
Take reservations and checks table reservation schedules, greets and seats members and guest
Create floor diagrams and station charts
Supervise dining room staff to assure proper service and service standards are met
Involved with F&B Manager to Hire, Train, Supervise, and evaluate dining and bar staff
Provide appropriate reports concerning employee's hours, schedules pay rates, job changes, tip pools, etc
Serve as a liaison between dining room and kitchen staff
Assure the correct appearance, cleanliness, and safety of the dining room areas, equipment, and fixtures. Quickly resolves all maintenance issues by working and communicating with the maintenance or house services departments
Make suggestions about improvements in the dining/bar service procedures and design
Produce daily/meal period revenue analysis/controls and other reports. Enforces daily cash and charge receipt procedures
Assure that the dining room, bar, and other club areas are closed according to the closing procedures and are secure
Maintain an inventory of dining room and bar items
Produce daily storeroom orders for perishables and staples needed for dining operation
Develop and maintains the dining room reservation system
Develop and implements an on-going marketing program to increase food and beverage sales Develops and controls the revenue control system
Monitor dining room/bar labor and supplies budget.
ADDITIONAL INFORMATION:
Overtime may be required to meet the needs of the customer. This position may require work during evenings and weekends. Must be able to work with individuals and teams of a diverse background
REQUIREMENTS
Proven ability to create member offerings in a country club setting that enhances membership value
Proven ability to interact with publishing/marketing staff as well as operational and culinary organizations to create and bundle offerings.
Proven knowledge of wine, wine lists, and training of delivery of beverage offerings in a dining setting.
Proven ability to oversee the orchestration of a la carte dining sequence and oversight of floor leadership in a dining room.
Degree in hotel/hospitality management and 3 years of industry experience
Excellent coaching and counseling skills
Proven experience with club members and a country club board, committees and social driven initiatives in a club setting.
Oversight of wait-staff, beverage staff, and assistants. Proven ability to train according to written standards Ability to communicate both verbally and in written form, presentation skills and business review interaction.
Proven interaction with Human Resources regarding all employees in organization and ability to recruit and retain utilizing both company resources and community contacts to maintain quality staff.
Background of marketing of member/dining events in operation with culinary and publish/marketing staff.
