Quality Assurance Manager
Potbelly Sandwich Works is growing and so is the Supply Chain Management deparment. We have over 100 company owned stores in the US and we're not stopping there! We are looking for a Quality Assurance Manager to help us keep things in check as we grow. Interested?
What are you gonna do?
Supplier Development. Manage the approval of new and/or alternate suppliers of Potbelly Sandwich Works food products with respect to food safety, quality attributes and product consistency. Ensure new suppliers meet all Potbelly quality assurance and food safety requirements including, microbiological testing, GMP’s, specification compliance, HACCP, nutrition, bioterrorism and animal welfare. Assure all components are in place prior to approval and system wide implementation. Manages sensory testing, sensory mapping, process modification, specification alignment and/or development efforts as required to develop supply source.
Supplier/Product Management. Manages all ongoing quality assurance efforts to include supplier communication, product auditing, continuous improvement initiatives, product optimization and/or alignment, new product development and product complaint resolution. Manages process modification, auditing plans, specification alignment and/or development efforts as required to develop and sustain the supply source.
Specification and Documentation Management. Develops and manages specifications, audit reports, formulations, communications, etc. to protect supplier and Potbelly Sandwich Works confidentiality and provide accessible data for data based decision making surrounding supplier assessment and approval, product assessment and approval.
Restaurant Food Safety Programs. Enhance/Develop food safety programs at the restaurant level. 1) Develop a system for tracking restaurant food safety performance including metrics for food safety audits, health department scores, CSI data, and customer complaint information. 2) Work with operations to drive improvement with respect to the five top food safety violations. Success will be measured by a reduction of food safety critical violations.
REQUIREMENTS
What do you need?
Bachelors degree in a scientific discipline including food science, microbiology, chemistry, or meat science. Graduate degree in a scientific discipline and/or business. Certifications in process control, HAACP, or lab analysis.
Strong working knowledge of HACCP, auditing principles, process control. Strong computer skills
3 to 5 years in a Quality Assurance role with a food manufacturer or restaurant concept, although previous experience in a chain QSR or
Casual Dining concept Quality Assurance department, preferred.
Supervisory or management experience.
Meat or Protein Science background, also preferred.
Experience in food testing protocols, methodologies and microbiological issues in food.
Experienced in food manufacturing and quality systems.
Experienced in quality auditing- GMP’s, Quality Systems.
Experienced in specification development and implementation.
Active in industry organizations such as IFT or AMI.
