Primarily supports the Culinary department by maintaining high standards of kitchen cleanliness. Directly oversee dish room operations to include staff supervision, coordination of breakdown stations for all group sales events, proper storage of all kitchen equipment, utensils, glass wares, plates, inventory of cleaning products and proper sanitation and safety procedures. Oversee and ensure proper work performance of all stewarding STARS and motivate new and current STARS through consistent coaching, counseling and feedback. Train staff on proper sanitation procedures and constantly monitoring adherence to these policies. Provide a safe work environment for all employees through compliance with established safety guidelines; identify and take action of potential safety hazards and report such to management. Delegation of Daily, Weekly and Monthly Sanitation Logs. Establish and maintain inventory levels of all China, Glass, Flatware, Chemicals and all supplies associated with department needs. Provide clear, continual communication with Chef's and Managers. REQUIREMENTS
Comprehensive knowledge of safe, sanitary cleaning procedures and various commercial cleaning equipment
Proven ability to supervise and train employees
Excellent communication skills
Bilingual is a plus
