POSITION: Banquet Manager
REPORTS TO: Director of Food and BeverageFLSA STATUS: Salaried Exempt
SMG, the leader in privately managed public assembly facilities has an excellent opening available October 1, 2005 for a Banquet and Catering Manager at Osceola Heritage Park in Kissimmee, Florida.
Osceola Heritage Park, a 120-acre complex, is home to the 11,000 capacity Silver Spurs Arena; 90,000 square foot Exhibition Building; Osceola County Stadium, home of spring training for the Houston Astros; Kissimmee Valley Livestock Building; and the University of Florida Extension Services. Osceola Heritage Park provides a venue for events including concerts, family shoes, sporting events, trade shows, banquets and more.The Banquet and Catering Manager manages the banquet, catering and suite services by performing the following duties:MAJOR RESPONSIBILITES:- Develop menus for events and help establish pricing for services- Assist clients with menu selection- Follow up with clients prior to event- Establish clients’ food, beverage, and operational needs for events- Prepare or assist with the preparation of Banquet Event Orders (BEOs)- Assist with preparation and setup of catering functions- Inspect food service facilities to ensure equipment and buildings meet requirements of state and local health laws and internal regulations- Inspect and taste prepared foods to maintain quality standards and sanitation regulations- Oversee events to ensure client satisfaction and quality control standards.- Follow events through to completion- Perform closing procedures for catering- Manage suite catering for arena events, ensuring client satisfaction- Recruit and train staff- Daily management of catering department- Assist in developing work plans, including scheduling and ordering and assign appropriate duties to subordinates- Coordinate staffing for events- Assist with creation of sales projections and budgets for events- Work within budget and projected guidelines for food, labor and all other costs- Assist with financial analysis concerning sales revenue, labor, and costs of sales to help reduce costs- Maintain purchasing and inventory controls- Uphold SMG and the Food & Beverage Department’s polices
SECONDARY RESPONSIBILITIES:- Book and sell catering events and meeting room space- Identify and implement sales goals and objectives- Market Osceola Heritage Park and Savor… Osceola Catering By SMG.- Professionally represent SMG, Savor… Osceola Catering By SMG, and Osceola Heritage Park at any industry/community function as assigned by the Director of F&B- Keep abreast of Exhibition Building pricing guidelines, rules and regulations and booking policies- Keep abreast of local hospitality and meeting trends- Maintain contact with active accounts to promote repeat business and generate leads for future business- Perform sales calls and presentations to prospective customer- Conduct site tours to prospective customers promoting the facility and its services- Maintain accurate documentation of all proposals, quotes, correspondence, and contracts related to prospective sales accounts.- Other duties as assigned.
SUPERVISORY RESPONSIBILITIES:
Manage employees in the Catering department. Individual is responsible for the overall direction, coordination, and evaluation of the unit. Carry out supervisory responsibilities in accordance with SMG's policies and applicable laws. Responsibilities include interviewing, hiring, and training employees; planning, assigning, and directing work; appraising performance; rewarding; disciplining employees in conjunction with Human Resources; addressing complaints and resolving problems.
QUALIFICATIONS:

Reasonable accommodations may be made to enable individuals with disabilities to perform the essential functions.- Bachelor’s Degree in Food & Beverage Management and two to three years supervisory experience in food service operations or equivalent combination of education and experience- Excellent organizational and planning skills- Excellent customer service skills- Excellent communication and interpersonal skills- Knowledge of Banquet Event Orders (BEOs) and Room Layouts- Strong cash handling skills - Knowledge of Microsoft Excel and Word Processing software - Ability to work with limited supervision- Ability to professionally interact with all levels of staff including management.- Personal vehicle for sales calls and offsite catering- Valid Florida Drivers License (Mileage is reimbursed at IRS rate)- Ability to work flexible hours, including nights, weekends and holidays, in addition to normal business hours.
