F&B Cost Control Manager

For more information about the Company, visit www.gaylordentertainment.com.The F&B Cost Control Manager is responsible for insuring that all Food and Beverage inventories are properly secured and accounted for. To insure that all Food and Beverage internal control policies and Sox narratives are being followed and adhered to.Responsibilities include but not limited to:1. Coordinate, direct and review the month end inventory and costs of all Hospitality and Attractions food and beverage outlets and Banquets.2. Oversee the daily maintenance of the Food and Beverage inventory/purchasing system, including issues, receiving and passing invoices to A/P for payment.3. Provide the necessary month end information and analysis to the Assistant Controllers to create the month end Food and Beverage inventory general ledger entries.4. Ensure that all Food and Beverage polices and controls are being followed as described in the SOX narratives.5. Oversee the daily review of banquet checks to ensure conformity with banquet event orders.6. Act as property POS Administrator, including pos maintenance functions such as menu item maintenance and user access. Ensure that the POS system is SOX compliant.7. Work with the various Food and Beverage managers in researching and explaining any unusual inventory or cost variances.8. Assist as requested with the production of the annual Food and Beverage annual budget.9. Ensure that all food received is inspected, counted and weighed by conducting daily spot checks of all food and beverage receiving docks and/or storerooms.10. Oversee the production of the Food and Beverage cost for every menu item except for Banquets on a routine basis.11. Perform other duties as assigned.
REQUIREMENTS
Four year college degree or equivalent in either business or hospitality management.
Three to five years as Food and Beverage Cost Control Mgr. of a large hotel with multiple outlets or 5 to 7 years Food and Beverage management experience. Must have advanced Excel knowledge and some experience with Access.
